Love Muffins

Yield: 24 muffins


  • 1/2 cup raisins
  • 2/3 cup boiling water
  • 1/2 cup (one stick) butter
  • 3 ripe bananas
  • 1/3 cup whole milk
  • 2 eggs

  • BOWL
  • 2/3 cup white flour
  • 1 1/3 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 cup flax seed
  • 2 tsp cinnamon
  • 1 cup no-sugar granola
  • 1 cup rolled oats
  • 1 Tbsp baking soda
  • 1/4 tsp salt
  • 2/3 cup chocolate chips


  1. Preheat over to 350 degrees.
  2. Combine raisins and boiling water in a blender. Add butter, cut into chunks. Add bananas and set aside to cool a bit.
  3. Combine "bowl" ingredients in a bowl, making sure to mix well so the brown sugar doesn't have any clumps.
  4. Add milk and eggs to the blender mixture and blend well. Add blender mixture with bowl mixture and stir until well combined. Scoop batter into 24 muffin tins, lined with paper cups. Bake for 15-20 minutes.


A friend passed along this family recipe, she always made them for new moms as the fiber was helpful. 😉 My older son is a very picky eater, so I've always had to work to find ways to get good food in him. He loves these muffins, so I've worked to cut down the sugar, but it's still higher than I'd like. Any suggestions for making these healthier, but still kid-friendly are welcome!
